Crepes are one of my absolute favourite breakfast foods.  I love that there are so many tasty combinations you can put inside of a crepe and that because they are so light you can eat a whole bunch of them!  Growing up, my dad used to make us "Swedish Pancakes" on the weekends.  These were basically just crepes that were even thinner than normal crepes!  While away at school, I tried to find a recipe that could fill the Swedish Pancake void that would creep in every now and then.  While this recipe doesn't really create my dad's pancakes, it does make a pretty delicious normal crepe!

Ingredients

  • 1 cup flour
  • 2 eggs
  • ½ cup milk
  • ½ cup water
  • 1 tbsp melted butter

Instructions

  1. Combine the flour and eggs.
  2. Slowly add the milk and water.
  3. Add the melted butter.
  4. Use approx ¼ cup of mix per crepe to get about 6 crepes.
